Homemade Veggie Broth or Soup

 Mirepoix (equal amount of carrots, celery & onions)
3 Garlic Cloves
1 tbsp Tomato Paste
2 cups - Water
1 tsp Green Onion
3 Bay Leaves
Handful of Kale
*any other vegetable you wish to add*

Saute mirepoix until its golden brown.

Add garlic, tomato paste, Bay Leaves and water.

Bring the heat down and let the soup slight simmer for 1 hr.

Saute Kale and Grape Tomatoes.

Add Your sautéed Kale and Grape Tomato to your bowl.

Pour your broth or soup and add the green onions.

All Done!
*If you want to make vegetable broth, with a strainer pour the mixture in from the pot and collect just the broth. You can then discard or save the veggies.*
