How I made my "Arugula Edamame Pesto"

Ingredients: 
  • 1 cup of fresh arugula leaves
  • 1/2  cup edamame (shelled and defrosted) 
  • 3 garlic cloves 
  • ¼ cup of EVOO 
  • 2 tbsp of shredded Veggie "Parmesan Flavor" 
  • 1 tbsp of lemon juice
  • handful of pinenuts 
  • add a sprinkle of black peppercorn & sea salt

 Directions:  Add everything in the processor and spin!
