Pumpkin Oats Pancakes
Ingredients:
1/4 cup gluten-free oat meal (grind your oats)
1/4 cup gluten-free oats
1/4 tsp baking powder
1/2 tsp cinnamon
1/8 tsp pumpkin spice
Make it yourself: combine an equal amount of cinnamon, ginger, nutmeg, clove
1 tsp vanilla extract
1/4 cup pumpkin purée
Make it yourself: get a pumpkin, clean it, cut in 1/2, gut, chop in 1/2 in 1/2s, bake @ 400F / 40 mins, scoop out flesh, place in processor to purée & all done
1 tbsp chia seeds mixed with 2 tbsp water
3 tbsp almond milk
1 tbsp agave nectar
Directions:
Place all wet ingredients in a blender.
Mix all dry ingredients in your mixing bowl.
In heated pan spritz some oil (place a scoop of mix in the sizzling pan, 1 min per side or until golden & all done)
